Ingredients
Tarts
- 4 cup flour
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 4 tbsp brown sugar
- 1 lb lard
- 1 egg beaten
- 1 tbsp white vinegar
- 1 tbsp water col
Filling
- 1 cup butter
- 4 cup brown sugar
- 4 cup raisins
- 2 tsp vanilla extract
- 4 eggs well beaten

Instructions
Tarts
- Mix together flour, salt, baking powder, baking soda and brown sugar.
- Cut in lard until fine crumbs have formed.
- In separate bowl, beat together egg, vinegar and water.
- Add wet ingredients to crumbs. May need to add up to 1 tbsp additional cold water.
- Roll out pastry, adding additional flour to cut down grease (up to 1/4 cup).
- Using large cookie cutter, cut out tart shells and mold them into muffin tins.
- Fill shells 1/2 full with filling.
- Bake in 375-400 degree F oven for about 20 minutes.
Filling
- Beat all ingredients together
