Ingredients
- 5.5 cups all-purpose flour Plus 2 tbsp
- 1.25 tsp active dry yeast
- 2.5 tsp kosher salt
- 2.5 cups water
- 2 Tbsp olive oil

Instructions
- In a very large bowl, mix all ingredients except olive oil with a spoon. The dough will be craggy and rough; this is fine, but if it feels excessively so, add another spoonful or even two of water.
- Brush top of dough with olive oil.
- Cover bowl with plastic and let rise 8 hours.
