Ingredients
- 1 turkey carcass
- 3/4 cup white rice
- 1 tsp fresh ginger minced
- 1 tbsp dry shrimp washed
- 1 tbsp salt turnip washed and chopped
- 1 tbsp green onion chopped

Instructions
- Throw bones in pot and cover with water.
- Bring to a boil, then turn heat to low.
- Simmer for 2-3 hours, then drain.
- Wash rice.
- Place rice in pot and cover with turkey broth to about 1 inch from top.
- Add ginger, dry shrimp and salt turnip.
- Cover and place on heat; bring to boil.
- Reduce heat and simmer for about 1 hour.
- Wisk to remove lumps.
- Serve with green onions.

Note:
Can substitute 1 1/2 cups cooked rice for 3/4 cups dry rice.
