Quick Marinade
- 1 cup milk
- 1 tsp fresh lemon juice
- 1 tsp sugar
- 2 tsp cornstarch
- 1/4 tsp black pepper
Batter
- 1/2 cup Panko bread crumbs
- 1/2 cup breadcrumbs (regular or italian)
- 1/2 cup all-purpose flour
- 1 tbsp onion powder
- 1 tsp sal
- 1/2 tsp pepper
- 2 cups Oil (or shortening)

Instructions
- Cut chicken into strips. For more tender strip, cut AGAINST to the grain
- Combine milk, lemon juice, sugar and pepper into small bowl
- Whisk in cornstarch. This gives protective coating that locks in juices
- Pour over chicken and marinate between 20-60 minutes
- Heat up oil to approx 365F
- Combine all batter ingredients into shallow bowl
- Thoroughly coat all chicken in batter
- Fry chicken 2-4 minutes each side, depending on how thick they are. Should be approx 165F internal temp.
- Remove chicken and place on paper towel
