Ingredients
- 4 egg yolks
- 2 tsp vanilla extract
- 2 cup buttermilk
- 1/2 cup butter melted
- 2 cup all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tbsp sugar
- 1/2 tsp salt
- 4 egg whites
- 1 pinch cinnamon

Instructions
- Preheat waffle iron
- In medium bowl, whisk together egg yolks, vanilla, buttermilk and butter until blended
- Combine flour, baking powder, baking soda, sugar, salt, and cinnamon and stir into buttermilk mixture
- In separate bowl, whip egg whites with electric mixer until stiff. Fold into batter
- Spoon batter onto waffle iron, close and cook until golden brown. Waffles are usually done when steam subsides.
