Ingredients
Basic Rub
- 1/4 cup brown sugar (firmly packed)
- 1/4 cup paprika
- 3 tbsp black pepper
- 3 tbsp salt (coarsely ground)
- 1 tbsp hickory-smoked salt (or more coarsely ground salt)
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp celery seeds
- 1 tsp cayenne
BBQ Sauce
- 2 cup ketchup
- 1/4 cup cider vinegar
- 1/4 cup worcestershire sauce
- 1/4 cup brown sugar (firmly packed)
- 2 tbsp molasses
- 2 tbsp mustard
- 1 tbsp tobasco sauce
- 2 tsp liquid smoke
- 1/2 tsp black pepper
- 1 tbsp basic rub

Instructions
Basic Rub
- Combine all ingredients in a mixing bowl and stir to mix.
- Store the rub in an airtight jar away from heat or light; it will keep for at least 6 months.
BBQ Sauce
- Combine all ingredients in non-reactive saucepan and bring slowly to a bowl over medium-high heat.
- Reduce heat to medium and gently simmer the sauce until dark, thick, and richly flavoured, 10 to 15 minutes.
- Transfer sauce to jars and store in fridge. It will keep for several months.
Ribs
- Remove membrane from ribs.
- In a shallow roasting pan, add about 1" of water and a few lemon slices.
- Place ribs on the tray, meaty side up.
- Cover well with aluminum foil and place in oven at 325F. Back ribs take about 45 minutes; side ribs take about 90 minutes.
- Drain the tray and baste ribs with BBQ sauce.
- Grill ribs for about 20 minutes, adding BBQ sauce as appropriate.
