Instructions
Basic Rub
  1. Combine all ingredients in a mixing bowl and stir to mix.
  2. Store the rub in an airtight jar away from heat or light; it will keep for at least 6 months.
BBQ Sauce
  1. Combine all ingredients in non-reactive saucepan and bring slowly to a bowl over medium-high heat.
  2. Reduce heat to medium and gently simmer the sauce until dark, thick, and richly flavoured, 10 to 15 minutes.
  3. Transfer sauce to jars and store in fridge. It will keep for several months.
Ribs
  1. Remove membrane from ribs.
  2. In a shallow roasting pan, add about 1" of water and a few lemon slices.
  3. Place ribs on the tray, meaty side up.
  4. Cover well with aluminum foil and place in oven at 325F. Back ribs take about 45 minutes; side ribs take about 90 minutes.
  5. Drain the tray and baste ribs with BBQ sauce.
  6. Grill ribs for about 20 minutes, adding BBQ sauce as appropriate.
