Ingredients
- 1 1/2 lb halibut fillet
- 6 clove garlic
- 1 tbsp fresh ginger
- 2 tbsp cilantro
- 3 tbsp sugar
- 1/4 cup soy sauce or fish sauce
- 3 tbsp dry sherry
- 3 tbsp sesame oil dark
- 1 tsp salt course
- 1 tsp black pepper

Instructions
- Rinse fish fillets under cold running water and blot dry with paper towels.
- Pound garlic, ginger, cilantro leaves and root, and sugar to a paste.
- Work in with fish sauce, sake, sesame oil, salt, and pepper.
- Spoon marinade on both sides of the fillets.
- Cover the fish with plastic wrap and let marinate in refrigerator for 30 minutes to 1 hour, turning the fillets once or twice.
- Grill fish in basket for 4 to 6 minutes each side.
- To test for doneness, press fillet with your finger. It should break into clean flakes when fully cooked.
