Instructions
  1. Rinse fish fillets under cold running water and blot dry with paper towels.
  2. Pound garlic, ginger, cilantro leaves and root, and sugar to a paste.
  3. Work in with fish sauce, sake, sesame oil, salt, and pepper.
  4. Spoon marinade on both sides of the fillets.
  5. Cover the fish with plastic wrap and let marinate in refrigerator for 30 minutes to 1 hour, turning the fillets once or twice.
  6. Grill fish in basket for 4 to 6 minutes each side.
  7. To test for doneness, press fillet with your finger. It should break into clean flakes when fully cooked.
