Ingredients
- 12 oz pork fillet
- 1 clove garlic
- 1 tbsp fresh ginger grated
- 6 tbsp chicken broth
- 2 tbsp dry sherry
- 1 tbsp soy sauce light
- 1 tsp sugar
- 2 tsp corn starch
- 3 tbsp peanut oil
- 1 red bell pepper
- 1 yellow onion
- 1 bunch green onion
- 3 tbsp black beans

Instructions
- Cut pork into thin slices across the grain of the meat.
- Marinate pork with garlic and ginger at room temperature for 15 minutes.
- Blend together stock, sherry, soy sauce, sugar, and cornstarch in a small bowl.
- Heat oil in wok or large frying pan.
- Stir-fry marinated pork for 2-3 minutes.
- Add peppers and scallions and stir-fry for another 2 minutes.
- Add beans and sauce mixture and cook until thick.
- Optionally garnish with fresh cilantro sprigs.
