Ingredients
- 1 lb salmon fillet with skin
- 1/3 cup olive oil
- 1 tsp lemon peel grated
- 1/4 cup lemon juice
- 2 tbsp fresh dill chopped
- 1/4 tsp salt
- 1/4 tsp black pepper

Instructions
- Cut salmon crosswise into 2-3 inch wide pieces. Measure thickness to determine cooking time.
- Mix all other ingredients together and pour into shallow glass dish.
- Add fillets to dish, turning to coat. Cover dish and let marinate in fridge for up to 30 minutes, turning occasionally.
- Reserving marinade, place fillets skin side down on greased grill over medium-high heat.
- Cook fillets, basting frequently and using all the marinade, for 10 minutes per inch of thickness.
- Turn fillets over halfway through cooking.
- Cook fillets until fish flakes easily when tested with fork and flesh is opaque.
