Ingredients
- 3 tbsp vegetable oil
- 1 tbsp unsalted butter
- 3/4 cup rolled oats large-flake old-fashioned
- 1 yellow onion small, finely chopped
- 1 clove garlic minced
- 1/2 tsp fresh ginger minced
- 1 bay leaves
- 1 1/2 cup vegetable broth or fish stock
- 1/2 cup whipping cream
- 1 cup cheddar cheese shredded
- 1 tbsp fresh tarragon chopped
- 1 tbsp fresh parsley chopped
- 1 dash black pepper to taste
- 1 dash salt to taste

Instructions
- In heavy-bottomed saucepan, heat oil and butter over med heat.
- Add oats, garlic, ginger, bay leaf.
- Cook, stirring for 8 minutes or until oats are golden and fragrant.
- Add stock, 1/2 cup at a time, cooking each addition until all the liquid is absorbed before adding more stock.
- Stir in the cream, cheese, tarragon and parsley.
- Season with salt and pepper to taste.
- Discard bay leaf.
- Remove from heat and let stand 10 min before serving.
