Ingredients
- 2 lb potato
- 2 tbsp fresh oregano or 1/2 tsp dried oregano, chopped
- 2 lemon
- 2 tbsp olive oil
- 1/2 cup water
- 1 dash salt
- 1 dash black pepper freshly ground

Instructions
- Preheat oven to 400 degrees F.
- Peel and cut potatoes into halves and place in a buttered casserole dish.
- Drizzle with olive oil and toss to coat.
- Juice lemons.
- Mix lemon juice, oregano and water and pour over potatoes.
- Season with salt and pepper and toss well.
- Cover and bake for 20 minutes.
- After 20 minutes, remove cover and continue roasting, basting every 15-20 minutes until potatoes are tender when tested with fork.
