Instructions
  1. Preheat oven to 400 degrees F.
  2. Peel and cut potatoes into halves and place in a buttered casserole dish.
  3. Drizzle with olive oil and toss to coat.
  4. Juice lemons.
  5. Mix lemon juice, oregano and water and pour over potatoes.
  6. Season with salt and pepper and toss well.
  7. Cover and bake for 20 minutes.
  8. After 20 minutes, remove cover and continue roasting, basting every 15-20 minutes until potatoes are tender when tested with fork.
