Ingredients
- 1 onion chopped
- 2 cans chicken broth fat free
- 1 celery sliced diagonally 1/2
- 2 carrot sliced 1/2
- 1 bay leaf
- 1/2 lb chicken breast boneless, skinless, chopped into 1/2
- 1 cup long grain rice
- 1 lime juice
- 1 tsp lime peel grated
- 1/2 tsp black pepper fresh, ground
- 1 tsp fresh lemon thyme or 1/4 tsp dried

Instructions
- Saute onion
- Combine broth, onion, celery, carrots, bay leaf, and chicken in crock pot
- Cover and cook on low just until chicken is almost cooked through, 4-5 hours on low
- Stir in rice, cover and cook on low until rice is tender, 1.5-3 hours
- Discard bay leaf
- Stir in lime juice, peel, black pepper and thyme
- Cover and cook for 5 minutes
