Ingredients
- 1/3 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 eggs large
- 3/4 cup Panko bread crumbs
- 1 cup coconut sweetened, shredded
- 1 lbs prawns
- coconut oil

Instructions
- Combine flour, salt, pepper into BOWL1
- Beat eggs into BOWL 2
- Combine Panko, coconut into BOWL 3
- Dip shrimp into flour mixture then eggs
- Dredge shrimp into coconut mixture, pressing gently to adhere
- Add enough oil to cover bottom of large skillet and heat to medium heat
- Fry coconut shrimp 2-3min on one side
- Flip and fry other side for 2-3 minutes or until golden brown
